For Minerva McGonagall, the firth thing that comes to mind is [livejournal.com profile] rhoddlet's Blood Destiny (http://rhoddlet.livejournal.com/208095.html) which I think is brilliant. Also because it inspired an equally brilliant fic by [livejournal.com profile] pogrebin exploring the same theme but on a different scale, although it features Hermione. Mudbloods/Muggleborns, Tom Riddle, and a younger Dumbledore, and Minerva at the center.

As for Cowboy Bebop...it's not quite a pairing as a giant conglomeration that features the entire group as a whole. I haven't read it in a while, but I remember it fondly as one of my first forays into fanfiction, in any fandom, and it had sort of joviality about it that wasn't tasteless, but just funny. Or maybe my memories are twisting them around. Either way, check these (http://www.big-big-truck.com/bebop/ao/) out. I think I first read "Freaks Flock Together," where the gang goes undercover at some kind of family rejuvenation counseling clinic.

Hope they're to your tastes.
